Gulachi Poli in Marathi, Maharashtrian traditional speciality, specially prepared for Makar Sankranti Celebrations, and eaten throughout the winter season, as its give warmth to body. It's so yum amd and delicious, that i can live on this, do try this recipe once in life, you are going to fall in love with this.

Ingredients Serving: 2

  1. Whole wheat flour 4 cups
  2. Til or sesame seeds 1 cup
  3. Grated jaggery/ Gud 1 and 1/2 cup
  4. Oil 1 cup
  5. Besan or chana dal flour 2 teaspoons
  6. Whole wheat flour 2 teapoons
  7. Salt one pinch
  8. Ghee for shallow frying amd and for serving

Instructions

  1. In a pan, dry roast til or. Sesame seeds until golden brown and starts spluttering. Let them cool completely, and then grind coarsely in mixer .
  2. Dry roast 2 teaspoons of whole wheat flour and besan together until golden , immediately switch off heat, do not over done .
  3. For preparing stuffing of Til Gud roti or Gulachi poli ... In a mixing bowl take roasted flours, sesame seeds powder and grated jaggery or gud
  4. Mix well everything , add 1 - 2 tablespoons of oil to it , prepare a homogeneous mixture ( stuffing is ready)
  5. For cover of roti, in a mixing bowl take 4 cups of whole wheat flour and 2-3 tablespoons of oil , mix well everything and prepare a soft dough using water . Keep it aside covered for rest for some time.
  6. Now prepare small balls of ready dough
  7. Roll out 2 small puris , place sufficient amount of ready stuffing on it and cover it with another puri
  8. Seal the ends properly, dust it with some dry flour and roll out thin roti or chapati
  9. Heat a non stick tawa or pan , cook Gulachi poli from both sides and apply little ghee also ( just like we do for parathas)
  10. Remove from heat, and allow them to cool completely
  11. Lastly , serve hot or cold with lots of thick ghee
  12. It tastes best when , it is cold
  13. Enjoy winter endlessly with family and friends
