ABOUT CARROT PECAN RICE ! RECIPE

CARROT PECAN RICE is very delicious and healthy dish for winter.

Ingredients Serving: 4

  1. Carrot-200 gms
  2. Pecan-100 gms
  3. Pearl onions-100-gms
  4. Gingly oil-50-ml
  5. Turmeric powder-1 Tbsp
  6. green chilies-4
  7. bay leaves-2
  8. Cinnamon-2
  9. cloves-3
  10. aniseed-1 Tbsp
  11. garam masala-2 Tbsps
  12. ginger garlic grated-3 Tbsps
  13. Saffron-2 pinches
  14. coconut milk-1/2 Cup
  15. long grain rice-2 cups

Instructions

  1. Soak rice for 20 minutes.
  2. Grate carrots.
  3. Slightly roast pecan and grind corse powder.
  4. In a saucepan fry chopped Pearl onions and bay leaves.
  5. Add grated carrots and sauté.
  6. Add turmeric,cinnamon,cloves,aniseed and garam masala.
  7. Add grated ginger garlic and sauté.
  8. Add Chopped mint leaves and stir well.
  9. Add soaked rice and powdered pecan.
  10. Add curry leaves and chopped coriander leaves.
  11. Add 3 cups water and 1/2 cup thick coconut milk.
  12. Add salt to taste.
  13. cook in the cooker 2 whistles !
  14. After 10 minutes open the cooker and stir.
  15. CARROT PECAN RICE is ready.
  16. Decorate as you like it.
