ABOUT Rashi kheer RECIPE

This is a traditional odia recipe which is especially done in Makar Shankranti. Rashi means til / sesame.In this kheer we ( odias) generally use rice, sesame, jaggery and milk. Many people don't use milk in this kheer. But I don't like without milk kheer. ln my version I don' t use til. For quick recipe of kheer I use Til ki ladoos/ Sesame ladoos. As there is jaggery added in the ladoos ,so I use less amount of jaggery. The aeroma of the kheer is like heaven and it is also heavenly in taste.

Ingredients Serving: 6

  1. Basmati rice-1/2 cup
  2. Sesame laddoos-180 gm
  3. Jaggery-1/4 cup
  4. Salt -1/2 tsp (to maintain the sweetness of Kheer)
  5. Milk - 1 liter
  6. Ghee-1 tsp
  7. Splitted cashew nuts-10-12
  8. Bay leaves-2
  9. Water-2-3 cup

Instructions

  1. First of all powder the sesame laddoos ( roughly)
  2. Wash and rinse the rice and keep it aside.
  3. Heat a pressure cooker and put ghee in it.
  4. Roast the cashew nuts and keep them aside.
  5. Put bay leaves in it and then add water along with rice and salt and cook them till 4-5 whistle in low flame.
  6. Switch off the flame,mash it well and add milk in it ,when it boils then add the sesame powder in it.
  7. Then mix jaggery and roasted cashew nuts in it and cook it in low flame.
  8. When the kheer becomes a little thick ,then switch off the flame.
  9. Now your delicious Rashi kheer is ready to serve.
  10. Serve hot, warm of in cold condition.
