ABOUT Surti Ponk wada RECIPE

These wadas are made from tender green sorghum grains which are sold in Surat specially during winter months.Flavored with green spices it tastes awesome with green chutney.

Ingredients Serving: 4

  1. Ponk/Hurda/Tender sorghum 250 gms
  2. Coarse besan 1 cup
  3. Rice flour 4 tbsp
  4. Green garlic 1/3 cup
  5. Ginger 1 inch
  6. Green chilli 1
  7. Coriander 2 tbsp
  8. Salt to taste
  9. Turmeric 1/2 tsp
  10. Asafetida 1/2 tsp
  11. Sugar 1 tbsp
  12. Lemon juice 1 tbsp
  13. Soda 1/2 tsp
  14. Hot oil 2 tbsp

Instructions

  1. Take ponk,wash in a strainer and dry it.
  2. Take green garlic and wash it properly.Chop finely.
  3. Crush ponk in chilli cutter.
  4. Add coarse gram flour to crushed ponk.
  5. Add rice flour too.
  6. Add crushed ginger chilli and chopped green garlic.
  7. Add the salt,sugar, turmeric and make a dough with water.
  8. Lastly add soda and lemon juice.
  9. Mix well and when oil becomes hot take small portions of wada and put in oil
  10. Fry at medium flame and remove when it turns golden from both sides.
  11. Serve hot with green chutney made from coriander and green garlic.
