ABOUT Chicken cheddar cutlets RECIPE

This cutlets are perfect as Evening snack and as a starter of your dinner party . I made this cutlets with shredded chicken instead of chicken mince with shredded cheddar cheese. I didn't use any garam mashala flavour, this time I tried it with dry thyme and lemon. I cooked the chicken using little turmeric with salt and pepper , you can skip turmeric powder.

Ingredients Serving: 8

  1. Chicken 300 g boneless cooked with little salt, turmeric and pepper and shredded
  2. Cheddar cheese 100 g shredded
  3. Eggs 4
  4. Vegetable oil 1 tablespoon
  5. Ginger shredded 1 tablespoon
  6. Finely chopped onion 1 medium size
  7. Finely chopped garlic 2 tablespoon
  8. Finely chopped green cilli 1 tablespoon
  9. Dry thyme 1 teaspoon
  10. Finely chopped coriander leaves 1/2 cup
  11. lemon juice 1 tablespoon
  12. Red chilli flex 3/4 teaspoon
  13. Lemon zest 1 teaspoon
  14. Salt as required
  15. 2 Slices of normal bread
  16. Bread crumbs for coating as required
  17. Oil for frying

Instructions

  1. Heat vegetable oil in a cooking pan
  2. Add chopped garlic and onions, fry until frying aroma appears
  3. Add cooked (with salt turmeric and pepper )and shredded chicken,mix ,
  4. Add ginger, chopped cillis and fry.
  5. Add salt and pepper mix well.
  6. Add 4 tablespoon of water and cover with a lid. Let it cook until the water evaporates fully.
  7. Then remove the lid add lemon juice and stir.
  8. Mix well and remove from heat. Take all the chicken mix in a mixing bowl and let it get cold.
  9. Now grind the bread slices in a dry mixture -grinder and make like coarse bread powder.
  10. Whisk 2 eggs and 2 egg whites with slightly salt and chilli flex . Keep aside 2 egg yolks.
  11. Now take the chicken and add 2 egg yolks shredded cheddar cheese, dry thyme, lemon zest, chopped coriander leaves and powdered bread slices. Add salt and pepper as required. Mix all properly.
  12. Devide the chicken cheddar mix into 8 balls.
  13. Take one by one and give the desired shape. Then coat with breadcrumbs.
  14. And deep in whisked eggs , again coat it with breadcrumbs and keep aside on a plate.
  15. Repeat the process for all cutlets.
  16. Now keep all cutlets in freezer for atleast 15 minutes.
  17. Then heat oil in a frying pan and shallow fry all cutlets. Fry 2 cutlets at a time or as per your pan size.
  18. Keep fried Chicken- cheddar cutlets on kitchen tissues first for excess oil absorption.
  19. Then sprikle little chilli flex .Serve hot with Onion rings and your favourite deep.
