ABOUT Baked potato & vegetable RECIPE

Tomatoes, capsicum, lettuce, cauliflower sweetcorn, sprouts baked on potato bed with mozzarella and cheddar mixed with spices onion and garlic- so nice for a cool evening and also my favourite one.

Ingredients Serving: 4

  1. Potato sliced (like chips but slightly thick) 1 big size
  2. Capsicum rings 8
  3. Cauliflower finely chopped 1/2 cup
  4. Tomato sliced 1
  5. Lettuce 3-4 leaves
  6. Onion rings of 1 onion
  7. Cooked sweetcorn and moong sprouts 1 cup
  8. Finely chopped Garlic 1 Teaspoon
  9. Oregano 1 /2 teaspoon
  10. Italian seasoning 1 teaspoon
  11. Mixed herbs 1/2 teaspoon
  12. Salt and black pepper powder as required
  13. Mozzarella cheese slices 2-3 or shredded 1 cup
  14. Mayonnaise 1 tablespoon
  15. Lemon juice 2 teaspoon
  16. Green cilli sliced 3-4
  17. Cheddar cheese shredded 1/2 cup full
  18. Butter for greasing
  19. Olive oil 4 teaspoon

Instructions

  1. Grease the baking container with butter. Spread potatoes allover.
  2. Sprinkle salt and pepper and little olive oil, chilli flakes.
  3. Bake it for 15 minutes at 200°C
  4. After 15 minutes put mozzarella slices on baked potato layer
  5. Spread torn lettuce leaves, tomatoes, onions, cauliflower, garlic, capsicum.
  6. In a mixing bowl mix cooked sweetcorn and sprouts mayonnaise, salt, green cilli ,lemon juice and Italian seasoning.
  7. Spread the sweetcorn sprouts mix allover.
  8. Sprinkle salt, pepper,olive oil, oregano, mixed herbs, Italian seasoning.
  9. Spread shredded cheddar cheese
  10. Bake again at 200°C for 40 minutes
  11. Serve with garlic bread.
