ABOUT Orange and Coconut Cake RECIPE

Very light, spongy cake with a delicious citrus flavour, tastes great with coffee or tea.

Ingredients Serving: 6

  1. 2 cups All purpose flour
  2. 1+1/2 tsp baking powder
  3. 1+1/2 tsp baking soda
  4. A pinch of salt
  5. 1 cup thick yoghurt/curd
  6. Fresh juice from one orange
  7. Orange zest from one orange
  8. 1/4 cup oil or butter
  9. 1 tsp orange essence
  10. 1/4 cup grated coconut
  11. Orange food color (optional)

Instructions

  1. In a bowl, sift the flour, baking powder, baking soda and salt thrice and keep aside.
  2. In another bowl, mix yogurt, orange juice, essence, oil or butter and beat well with a hand mixer until fluffy. Add orange zest.
  3. Mix the dry ingredients into the wet ingredients, little at a time and gently fold in until well combined.
  4. Add half of the grated coconut into the batter.
  5. Line the baking dish with butter paper and sprinkle some grated coconut at the bottom. Pour the batter into it and sprinkle the remaining grated coconut on the top.
  6. Bake at 180 degrees C for 30-35 minutes or until a toothpick comes out clean. Enjoy!

Orange flavoured cake, even I have tried this one and it comes out beautifully :)
