ABOUT Mumbai-Style Vegetable Sandwich RECIPE

Inspired from Mumbai street food.

Ingredients Serving: 4

  1. 6-8 slices of bread (Use thick slices of bread)
  2. 1 large beet root (boiled and thinly sliced)
  3. 1 Cucumber (sliced)
  4. 1 large potato (boiled, peeled and thinly sliced)
  5. 1 medium red onion (peeled and thinly sliced)
  6. 2 medium tomatoes (thinly sliced)
  7. Chaat masala
  8. Cilantro mint chutney
  9. Butter or butter equivalent spread

Instructions

  1. Apply butter and the cilantro-mint chutney to one side of the bread and set it aside.
  2. Take two slices of the prepared bread on a clean flat surface.
  3. Sprinkle some chaat masala over the bread.
  4. Place slices of cucumber, tomatoes, beets, potatoes and cucumber again on one slice of bread.
  5. Cover it with the other bread. Press and cut it into 4 triangles.
  6. Repeat the process with the rest of the slices.
  7. To prepare the grilled version, heat the panini grill. Keep the prepared sandwich on the grill. Apply some butter on top and close the grill. If using an open grill pan, then apply some pressure on the sandwich so that it gets the grill marks.
