One more healthier option for breakfast which is equally yummy. With lots of vegetables and oats it can fulfill the required amount of fiber and will keeps you full for the longer period of time.

Ingredients Serving: 2

  1. Bread 6 slices
  2. To make hung curd spread :
  3. Hung curd 2 tbsp
  4. Butter 1 tsp
  5. Oregano 1tsp
  6. Black pepper ½ tsp
  7. Rock salt 1/2 tsp
  8. Coriander leaves 1 tbsp chopped
  9. To make vegetable filling:
  10. Onion 4 tbsp finely chopped
  11. Cumin seeds 1 tsp
  12. Garlic 2 cloves chopped
  13. Bell peppers 2 tsp
  14. Tomatoes finely chopped 2 tsp
  15. Kitchen king masala 1 tsp
  16. Salt to taste
  17. Red chilli powder 1 tsp
  18. Tomato sauce 2 TSP
  19. Lemon juice of half lemon
  20. Green chutney 2 tsp
  21. Oil 2 tsp to toast the sandwich

Instructions

  1. To make vegetable filling: Heat oil and add cumin and once it starts crackling saute garlic and onions.
  2. 2. Now add bell pepper and tomato and cook for 2-3 minutes.
  3. Then add oats and let it cook on slow flame in the vegetable moisture itself.
  4. Add salt, cumin powder, kitchen king masala and let oats cook well with the spices.
  5. Add lemon juice and tomato ketchup and give it a good mix and then keep aside.
  6. To make hung curd spread :
  7. In a bowl, mix hung curd, butter, rock salt, black pepper, red chilli, coriander leaves, oregano seasonings for the bread spread.
  8. To make sandwich: on one slice spread the vegetables mixture, on another tomato sauce+green chutney and on third hung curd spread.
  9. Toast this sandwich with little oil and then cut it diagonally in the four small triangles.
  10. Serve with tomato sauce and green chutney.
