A tasty Pickle with a beautiful combination of Pineapple and Anjir

Ingredients Serving: 4
Chopped pineapple - 1 1/2 cup
Dry Fig or Anjir chopped - 1/2 cup
Garlic cloves - 8
Ginger chopped finely - 1 tsp
Curry leaves - 8
Green chillies chopped - 3
Whole Pepper - 8
Red chilli powder - 3 tbsp
Fenugreek powder - 1 tsp
Aesafoitida - 1 tsp
Mustard seeds - 2 tsp
Sugar - 1 tbsp
Salt as per taste
Sesame seed oil - 4 tbsp
Vinegar - 2 tbsp
Instructions
Let's assemble our ingredients first.
Add sugar and salt in pineapple and mix well.
After 5 mins squeeze out all the juice from pineapple.
In a pan on high flame take oil and add mustard seeds.
When mustard starts to crackle add green chillies, garlic, ginger, pepper and curry leaves. Cook these till curry leaves become crispy and all the raw smell from other ingredients is gone.
Reduce the flame and add red chilli powder, fenugreek powder and aesafoitida. Cook for few seconds on low flame.
Now add the chopped Anjir and stir well.
After 2 mins add the pineapple juice and cook the Anjir.
After 5 mins add the pineapple pieces. Adjust the salt at this stage if needed. Cook well for 5 mins and then add vinegar.
Let it dry up very well and our pineapple Anjir Pickle is ready to be served with hot rice, chapati or thepla.
