ABOUT Classic Turkish Menemen RECIPE

Menemen is a very simple traditional egg dish from Turkey. It is generally served as breakfast with turkish bread and sour cream or cheese.

Ingredients Serving: 3

  1. Large Eggs 3 no.s
  2. Medium sized Onions 2 no.s
  3. Medium sized Tomatoes 2 no.s
  4. Medium sized Capsicum 1 no.
  5. Small Green chilli 1 no.
  6. Chopped parsley 1 tablespoon
  7. Crushed black pepper 1/2 teaspoon
  8. salt as per taste
  9. Olive oil 1 tablespoon

Instructions

  1. Chop onions, tomato, chilli and capsicum in small pieces. I also remove the skin of tomato.
  2. Heat 1 tablespoon of olive oil in a non stick pan.
  3. Add chopped onions, green chilli and capsicum and saute till they become soft.
  4. Add salt and tomatoes . Stir and and add crushed black pepper.
  5. Mix well, cover and cook in low heat until the mixture becomes mushy. It will take about 5-6 minutes.
  6. Add parsley and stir.
  7. Now make some cavities with the help of a spoon, where you will drop the eggs.
  8. Break eggs gently over the cavities.
  9. Don't stir any more. Just reduce the flame and cover to cook the eggs.
  10. After 3-4 minutes the eggs will cook enough to set.
  11. If you like hard egg, cook for little longer time.
  12. Remove from heat, garnish with some chopped mint leaves.
  13. Serve with any kind of bread.
