I made this in dinner, there are 3 layer of Nachos! Best option for dinner!

Ingredients Serving: 2

  1. Tomato salsa: 3 finely chopped tomatoes
  2. 1 large green capsicum finely chopped
  3. 1 tbsp jain ketchup
  4. Salt to taste
  5. 1 tsp sugar
  6. 3 basil leaves
  7. 1 tbsp coriander leaves chopped
  8. 1 tbsp green chillies chopped
  9. Filling: 2 cups kidney beans boiled and mashed
  10. 1 tbsp salsa sauce
  11. Salt to taste
  12. 1 tbsp chilli flakes
  13. 1 tsp pepper
  14. Nachos preparation: 2 cup maize flour
  15. 1 cup all purpose flour
  16. 1 tsp carom seeds
  17. 1 tsp Salt
  18. 1 tbsp oil
  19. Water as required
  20. Oil for Deep frying
  21. Toppings: 1 cup olive and jalapeno rings
  22. 1 cup finely chopped green capsicum
  23. 1 cup sweet corn kennels
  24. 1 cup grated processed cheese
  25. 1 tsp Oregano
  26. 1 tsp chilli flakes

Instructions

  1. Salsa sauce preparation:
  2. In a frying pan add oil, chopped tomatoes, capsicum, ketchup, salt, sugar and saute for 2 minutes.
  3. Add basil leaves, coriander leaves and saute for 1 minute and remove from heat, keep aside.
  4. Filling preparation:
  5. In a nonstick pan, add oil, salsa we made and cook for 2 minutes.
  6. Add boiled and mashed kidney beans, chilli flakes, salt, pepper and mix it well. Cook for 5 more minutes. Remove from heat and keep aside.
  7. Nachos preparation:
  8. In a mixing bowl, add maize flour, all purpose flour, salt, carom seeds, oil and mix it. Add water and knead it to make tight dough.
  9. Now roll it out and cut triangles from it.
  10. Deep fry them.
  11. Serving:
  12. In a large plate first place few nachos (I put 8-9 pieces), spread filling of kidney beans, spread salsa sauce, sprinkle olives, jalapenos, corn kernels and chopped capsicum.
  13. Repeat the same step 2 more times.
  14. Now on top, garnish it with lots of cheese, olives, jalapenos, oregano and chilli flakes. Serve immediately.
