ABOUT Swedish Pancakes or Fluffy Crepes RECIPE

Ingredients Serving: 3

  1. 1 cup milk at room temperature
  2. 4 Eggs
  3. 1/2 cup warm milk
  4. 3 tablespoon sugar
  5. 2/2 teaspoon salt
  6. 1 cup all purpose/plain flour
  7. 1/2 cup melted butter and more for cooking the pancakes

Instructions

  1. Blend eggs, milk, warm water, white sugar, flour, and salt together in a large mixing bowl with an electric mixer until well combined into a smooth batter.
  2. Add the melted butter into the batter while continuing to beat.
  3. Heat a skillet or crepe pan over medium heat. Coat the cooking surface with a thin layer of butter.
  4. Pour a thin layer of batter onto the prepared cooking surface; swirl the pan to assure even coverage.
  5. Cook the crepe until browned on the bottom, 1 to 2 minutes; flip the crepe and continue cooking until the other side is browned.
  6. Serve immediately topped with fruit compotes /jams and fruits of your choice
