ABOUT Anda-Ghotala RECIPE

It is basically a street food from Surat. It's a blend of grated anda masala and sunny side up. A kind of bhaji made of grated eggs eaten with pav. Very tasty and simple to make.

Ingredients Serving: 2

  1. Eggs - 3 (Boiled eggs 2)
  2. Onion chopped - 1 medium
  3. Garlic paste - 1/4 tsp
  4. Ginger paste - 1/2 tsp
  5. Tomato chopped - 1
  6. Green chillies chopped - 3 or according to taste
  7. Some Coriander leaves chopped
  8. Salt according to taste
  9. Chilly flakes according to taste
  10. Black pepper - 1/ tsp
  11. Garam masala - 1/4 tsp
  12. Dhaniya powder - 1/8 tsp
  13. Oil - 2 tsp
  14. Crushed dhaniya seeds - a pinch
  15. Rai - a pinch
  16. Butter - 2 tbsp
  17. 1 tbsp oil
  18. Grated cheese-1/4 cup (optional)

Instructions

  1. Grate the boiled eggs.
  2. Take a pan. Add butter and oil. After it melts add rai and coriander seeds and let them splutter.
  3. Add onions. Saute. Add ginger paste then garlic paste. Saute.
  4. Now add salt,chilly flakes, green chillies ,pepper,garam masala ,dhaniya powder and mix well. Saute for 1 minute.
  5. Add tomatoes and let them be soft and cook till the masala leaves the oil.
  6. Now take egg masher and mash the masala well like in a pav bhaji. Add grated eggs and cheese.
  7. Add coriander and mix. Grated masala egg is ready.
  8. Now on a tawa put small amount of oil on it. Put and egg without whisking to make a sunny side up.
  9. Add pinch of salt, pepper and green chillies. Sprinkle some garam masala on top of it.
  10. Take it off from the tawa. Let the yolk be runny. Put it on the top of the masala egg which is already in the plate.
  11. The anda ghotala is ready to be served with buttered pavs. A perfect tea-time snack .
