ABOUT Birds Nest RECIPE

Potato based canapes coated with vermicelli to resemble birds nest. Each nest is thus fried and stuffed with paneer mixture and topped with chutney's. To compliment the nest some birds made of the potato mixture adds to the concept of birds nest. Not only a treat to eyes but also tongue.

Ingredients Serving: 6

  1. 5-6 potatoes boiled and mashed
  2. 3-4 Bread slices
  3. Salt to taste
  4. Brown vermicelli (roasted one)
  5. For the paneer stuffing
  6. 200 gms Paneer (cut into small cubes)
  7. 1 onion, finely chopped
  8. 2 tsp tomato puree
  9. 1 tsp tomato ketchup
  10. Salt to taste
  11. 1/2 tsp red chilly powder
  12. Oil for frying
  13. Green chutney and mithi chutney for serving
  14. 1/4 tsp haldi powder
  15. 1/2 tsp garam masala powder
  16. 8-10 boiled peas for eyes of birds

Instructions

  1. In mashed potato, add salt and fresh bread crumbs (by crushing fresh bread slices in a mixi). The mixture should be well binded or else, add more breadcrumbs.
  2. Add small portion of the mixture and coat it in vermicelli (crush vermicelli with hand first) and then shape it into hollow canapés in the form of a nest. Repeat the procedure to form more nest.
  3. Retain some mixture to form birds. Take small portion of mixture and shape into a elongated cylinder. Now from the half fold it to flatten to form birds body. The neck should be erect and body bended. Shape the bird to form a beak with hand as shown in the picture. Shape the lower part with hand. Bird is ready. Form four such birds.
  4. For paneer mixture. Heat 1 tsp oil and fry onions till pink, add all masala, fry for a minute, add paneer cubes, mix well, add tomato puree and tomato sauce, mix well and turn off the gas. Remove mixture on a plate and keep aside.
  5. Heat sufficient oil for frying when nice and hot fry these nest (2-3) at a time on high flame. Remove it on a tissue to drain excess oil completely. Fry the birds and keep aside.
  6. To assemble in each nest place a tsp of paneer mixture and top it with green chutney and mithi chutney. Add whole black peppers to form the eyes of birds on both sides.
  7. Garnish a plate with lettuce leaves and spring onions greens and place the birds and nest. Enjoy.
