Soak the red chana overnight in enough water.
Next day boil the Chana with little salt
Drain the water out.
Boil until soft and chewable but not mushy.
Take very little oil in a pan.
Sauté the boiled chana with a sprinkle of water
Add the capsicum and onion and sauté well.
Then add all the remaining ingredients except coriander.
Adjust the taste as per.
Garnish with coriander and some more ginger julienned.
Serve hot.
