This recipe is a Vegetarian version of Non-vegetarian lotus rice.Usually in Vietnam or in other parts of Asia continent pork or chicken is used in this dish.Glutinous rice or sticky rice is used to prepare this dish.In this recipe I used basmati rice with vegetables and follow the same procedure to prepare the dish, but of course with vegetarian delight to satisfy your tastebuds.

Wash and soak dry lotus seeds in a water for about 1 hr.
After 1 hr cook add enough water to a deep pan add soaked lotus seeds and cook for 25-30 minutes.
When seeds are cooked drain and keep aside for later use.
Heat a pan in medium heat and add sesame oil or you can use vegetable oil.
Add onion and cook until it turns translucent in colour.
Add mix vegetables and half of cooked lotus seeds .
Add black pepper powder,soy sauce and salt to taste,stir well and cook for 3-4 minutes.
Now add cooked rice and stir well to mix everything nicely.
Place a steamer add water to it and boil on high flame.
Take a parchement paper place it in a bowl.
Put the rest of the lotus seeds to the bottom of it, and top with the fried rice.
Then wrap it up and put the rice package into the steamer and steam for about 10 mins.
Remove from the steamer and serve hot.
