Ingredients Serving: 6

  1. Grated Potato - one and half cup
  2. Grated cheddar cheese - 1/2 cup
  3. Salt - 1/2 tsp
  4. Ground Black Pepper - 1/2 tsp
  5. Small sized egg - 6
  6. Cooked and chopped bacon - 2-3 tbsp
  7. Cooked and chopped sasuge - 2 tbsp (optional)
  8. Chopped red capsicum - 1 tbsp (optional)
  9. Chopped spinach - 2 tbsp (optional)
  10. Heavy cream - 2 tbsp (optional)

Instructions

  1. Wash grated potato two to three times or until you get clean water.
  2. Drain the potato.
  3. Preheat the oven at 200 degrees celsius temperature.
  4. Grease the muffin tin with butter or oil and set aside.
  5. Squeeze the potato with your hands to excess the extra water.
  6. In a bowl take potato, cheese, salt and pepper and mixed together.
  7. Gently press the potato inside the greased muffin tin. **shape should be like a nest**
  8. Bake for 15 to 18 minutes or till the sides will be brown.
  9. Reduce the oven temperature to 175 degrees Celsius.
  10. Put an egg inside the potato Nest.
  11. Put little bit of heavy cream, spinach, sausage, capsicum and bacon.
  12. Bake for 12 to 15 minutes or till just set the egg.
  13. Let it cool for 5 minutes.
  14. With the help of a knife gently loose the side of muffin tin and take out the nest carefully.
  15. Sprinkle some more bacon on top and serve with salad.
