Ingredients Serving: 5

  1. Besan 200 grams
  2. Turmeric 1/2 tspoon
  3. Ginger-green chilli paste 1 tbspoon
  4. Salt per taste
  5. Lemon juice 1 tbspoon
  6. Eno salt 1 tsp
  7. For tadka-1 tbspoon oil
  8. Mustard seeds 1 tbspoon
  9. Sugar 1 tbs
  10. Lemon juice 1 tbsp
  11. Coriander leaves

Instructions

  1. Sieve gram flour and keep in a utensil. Add little water at a time and stir to make a thick mixture. Add turmeric powder in it and mix..there should not be no lumps. Cover gram flour mix and keep aside for 20 minutes allowing it to ferment.
  2. Put two glasses of water in the utensil you will use to make dhokla. And place it on the gas to heat. Also keep a stand in the utensil on which you can keep a plate filled with gram flour mixture.
  3. Grease the plate with oil. Put lemon juice,green chilli,ginger paste,salt in the gram flour mixture. Now put eno salt in it and stir the mixture in spoon.
  4. As soon as air bubbles are appear in mixture pour it in the plate and keep the plate in stand. Cover the utensil and cook dhokla for 20 mints on a high flame.
  5. After 20 mints insert a toothpick in dhokla, f come out clean dhokla is ready..if not the cook for another 5 mint. Turn off the gas and take out the dhokla plate.
  6. Allow dhokla to cool then separate it from the edges using a knife. Overturn the plate with dhokla to another plate. Cut into desired shapes.
  7. For tadka-pour oil in small pan..add mustard seeds.When it crackles add green chilli, then add 1 cup water followed by salt n sugar. Turn of the gas once water comes to boil then mix lemon juice.
  8. Pour this tadka over the dhokla with spoon. Garnish with green chilli and coriander leaves.
