Ingredients Serving: 10

  1. 1/4 cup Gram flour (besan)
  2. 1/2 cup Chana dal (Bengal Gram Dal) , soaked and drained
  3. 1-1/2 cup Sweet corn
  4. 2 Green Chillies sliced finely
  5. 1 inch Ginger grated
  6. 2 Dry red chillies
  7. 1 large onion chopped finely
  8. 1/2 teaspoon Cumin seeds
  9. 8-10 curry leaves chopped roughly
  10. handful of Coriander Leaves finely chopped
  11. salt to taste
  12. oil to deep fry

Instructions

  1. soak the chana daal for about 4 hours to soften
  2. To begin with, add soaked and drained chana dal, corn kernels, ginger, green chilies, curry leaves and dry chilies in a mixer and make a coarse paste
  3. transfer this coarse paste in a mixing bowl
  4. Add gram flour, chopped coriander leaves, cumin seeds, sweet corn kernels, salt and mix well
  5. heat oil for deep frying in a wok
  6. make small vadas by greasing your palms
  7. deep fry each vada until golden /light brown
  8. rest fried vadas on an absorbent paper to drain excess oil
  9. serve while warm accompanied with tamarind and coconut chutneys
