Spiced Buckwheat Bundt Cake

Ingredients Serving: 6

  1. 1.5 cups Buckwheat flour
  2. 1 teaspoon baking powder
  3. 3/4 cup Milk
  4. 1 teaspoon vanilla extract
  5. 2/3 cup brown sugar
  6. 3 eggs at room temperature
  7. 110g soft unsalted butter
  8. 1/4 teaspoon cinnamon
  9. 1/4 teaspoon cardamom
  10. 1/8 teaspoon nutmeg
  11. 1/4 teaspoon salt

Instructions

  1. Preheat oven to 180. Grease bundt pan and dust with flour
  2. Sieve flour, salt and baking powder in a bowl. Add cinnamon, cardamom and nutmeg. Mix well and keep it aside
  3. Blend sugar and butter in a bowl for 4-5 minutes
  4. Add eggs, 1 at a time and blend until pale and frothy. Add vanilla extract and mix well
  5. Add milk and dry ingredients alternately and blend until just combined
  6. Pour batter into prepared pan. Bake for 25-35 minutes until done
  7. Allow to cool for 30 minutes. Demould and cool completely
  8. You can serve cake as is or add milk sugar Frosting. Mix sugar and milk in a bowl until it is thick. Pour over the cake all over. Sprinkle cinnamon cardamom, sugar mix on top. Slice and serve
