A delicacy from Rajasthan,and a little different from Besan Burfi of North India.

Ingredients Serving: 4

  1. Besan(chickpea flour) 2cups.
  2. Ghee 1/2cup +2cups.
  3. Sugar 1cup.
  4. Chopped cashewnuts1/2cup.
  5. Chopped almond1/2cup.
  6. Chopped pistachio 1/4cup.
  7. Green cardemom powder 1tea spoon.

Instructions

  1. Mix 1/2cup ghee to besan and mix well.Add a little water(approx 1/2cup) to make a hard dough.
  2. Cover and leave the dough for 10 minutes.
  3. Now divide dough into 12_13 balls.Press each ball to make a "muthia "
  4. Prepare all muthias.
  5. Heat remaining ghee in a kadahi.
  6. Fry muthias on low flame to golden.Do not hesitate in frying the muthias.Fry 5_6in one batch and it will take about 8_10 minute to fry each batch.
  7. Fry all muthias in this manner.Cut each muthia into small pieces.
  8. Grind them into a fine powder and muthias will look like this:point_down:
  9. Heat a pan add sugar and1/2cup water.Heat till sugar dissolves.
  10. Heat on medium flame to attain a thick consistency and we get a 1 strand syrup like this :point_down:
  11. Add crumbled besan to syrup,lower the flame,add dry fruits(reserve some dry fruits for garnishing),and cardemom powder, mix well and remove from stove.Add 5_6table spoon remained ghee to the besan.
  12. Grease a thali with ghee,you may also use a perchment paper to spread the besan.Pour besan over thali,flatten it with a spatula.
  13. Garnish with remaining dry fruits and leave for 20 minutes to set.
  14. Cut into your desired shapes.
  15. Serve.
