Wash the potatoes with cold water and pat dry well. Peel off the skin. Take a potato and cut it into two halves lengthwise. Cut each half into two halves lengthwise and then again cut each half further into two halves lengthwise. Repeat this for other potatoes. Combine olive oil, oregano, cajun spice and salt in a separate bowl. Toss the potatoes with olive oil and spice mixture. Grease a baking sheet with cooking spray and spread the potatoes in a single layer. Bake until golden and crispy, about 20-25 minutes.
