Here jalapeno is stuffed with black _eyed beans and then cooked in gravy.This chilli curry is accompanied by whole wheat puri made with capsicum puree.

Ingredients Serving: 2
Oil 4 table spoon.
Jalapeno 8nos.
For jalapeno stuffing:
Chopped onion 1/2cup.
Red chilly powder 1/2tea spoon.
Garam masala powder1tea spoon.
Coriander powder1tea spoon.
Lemon juice 1tea spoon.
Salt to taste.
For gravy:
Onion paste 1cup.
Ginger garlic paste 1table spoon.
Tomato puree 1/2cup.
Garam masala powder 1/2tea spoon.
Turmeric powder 1tea spoon.
Coriander powder 1table spoon.
Red chilly powder 1tea spoon.
Oil 100ml.
For puri:
Whole wheat flour 1cup.
Capsicum puree 3/4 cup.
Nigella seeds 1tea spoon.
Oil 1tea spoon.
Salt 1tea spoon.
Oil 200 ml (for frying).
Chopped coriander leaves for garnishing.
Instructions
Soak and boil lobia till soft .Keep aside.
Heat 1table spoon oil in a pan ,add chopped onion and fry till golden.
Add lobia,stir and add all spices.
Stir well ,add 1/2cup water and salt.
Cover and cook on medium flame till water dries.Keep aside.
Make longitudinal slit on each jalapeno,discard seeds.
Stuff lobia stuffing.
Heat oil in another pan.
Add 2table spoon oil and onion paste.Fry onion till golden.
Add ginger_garlic paste,add 2table spoon water and cook for 2minutes,till raw smell of ginger garlic eliminates.
Addtomato puree and remaining spices.Add salt also.
Stir and cook on low flame till oil separates.
Add 1cup water,boil and arrange jalapeno in the pan.
Cover and cook on medium flame till jalapenos are soft.
Adjust gravy as you desire.
Garnish with chopped coriander leaves.
Jalapeno curry is ready.Now we 'll make puris.
For puris:
Take flour in a bowl,add all the ingredients.
Mix till well incorporated.
Add some water to make a semi soft dough.
Leave for 10minutes,covered.
Make small balls (aproximately 8_10).
Roll into puris.
Fry on medium to high flame till golden_ pink.
Serve with stuffed jalapeno.
