Take a pan heat vegetable stock and add quinoa then add salt ,red chilli powder,peprika powder and cook it till it double and water evaporates then switch off gas.
Now take a bowl add quinoa ,sweet corn ,bean sprouts,chopped tomato and mix well add lemon juice,ginger powder and fresh coariander.
Now slit bell pepper into half and fill it with quinoa mixture and place it on greesed baking tray and bake it for 12 min at 180.c
