Ingredients Serving: 4

  1. Rice - 1 1/2 cup(washed and soaked for 15 minutes)
  2. Button mushrooms - 100 grams
  3. Large firm tomato - 1
  4. Soya chunks - 10
  5. Small onion - 1
  6. Baby corn - 2
  7. Ginger garlic paste - 3 tbsp
  8. Curd - 1/2 cup
  9. Oil - 3 tbsp
  10. Star anise - 1
  11. Bay leaf - 1
  12. Cardamom - 1 stick broken
  13. Cinnamon - 1
  14. Dried kapok bud - 1
  15. Garam Masala Powder - 1 tbsp
  16. Biryani masala powder - 2 tbsp
  17. Coriander powder - 1 tbsp
  18. Chopped mint leaves and coriander leaves - small cup
  19. Salt - 1 1/2 tbsp

Instructions

  1. Take a pressure cooker and add oil. Once hot, add the spices and saute.
  2. Once done, add the chopped onion and fry until translucent.
  3. Now add the ginger - garlic paste and fry.
  4. Add sliced mushroom,baby corn and saute for 2-3 minutes.
  5. Add the soya chunks, chopped tomatoes, and fry until mushy.
  6. Add all the spice powders and mix well.
  7. Add chopped coriander leaves and mint leaves and mix well.
  8. Add curd and mix well.
  9. Add salt and mix well.
  10. Leave it to boil until done.
  11. Add soaked rice.
  12. Add water(1 cup rice - 1 1/2 cup water).
  13. Close the lid and leave it for 3 whistles
  14. Let the to steam escape and if you open and see biryani is ready.
  15. Serve it hot with a bowl of raita.
