Rinse and chop the tomatoes roughly
Peel and chop the onion too
Heat 2 tablespoon oil in a wok
Add the chopped onion, tomatoes and tamarind
Saute for 2 minutes on low heat and turn off the heat
Let the mix cool off for a while and then blend it into a puree
Transfer the puree back in the wok Add salt,sambhar powder and mix
Cook on low heat as the mix thickens (you will see it boiling and even spluttering at times)
Once the mix reaches the desired chutney consistency, turn off heat and transfer the chutney to a serving bowl
Heat the remaining oil in a tadka pan
Add curry leaves,mustard seeds,asafoetida and dry red chilli
Let the tadka splutter
Take it off heat and immediately add it to the chutney
Serve the chutney with piping hot idlis,dosas,utappams,etc
