A quesadilla is a wheat,flour or corn tortilla, which is filled with cheese.The tortillas are then grilled or fried till the cheese melts and the tortillas turn crispy. Variations include a mixture of spices, cooked vegetables and meat like chicken , bacon along with the cheese. This is a very simple,easy and quick Indian version of quesadilla. A mixture of onions,tomatoes, green chilles , chicken tikka masala and mozarella cheese are sandwiched between two chappatis or wheat tortillas. It is then shallow fried in a pan till the cheese melts and the tortillas turn crispy and golden on both sides. This version is then cut into wedged to serve with ranch dressing or yogurt dip.You can use any other dry cooked vegetable or cooked chicken or and dry savoury leftovers.
