ABOUT Chicken Tikka Indian Quesadilla Snacks RECIPE

A quesadilla is a wheat,flour or corn tortilla, which is filled with cheese.The tortillas are then grilled or fried till the cheese melts and the tortillas turn crispy. Variations include a mixture of spices, cooked vegetables and meat like chicken , bacon along with the cheese. This is a very simple,easy and quick Indian version of quesadilla. A mixture of onions,tomatoes, green chilles , chicken tikka masala and mozarella cheese are sandwiched between two chappatis or wheat tortillas. It is then shallow fried in a pan till the cheese melts and the tortillas turn crispy and golden on both sides. This version is then cut into wedged to serve with ranch dressing or yogurt dip.You can use any other dry cooked vegetable or cooked chicken or and dry savoury leftovers.

Ingredients Serving: 4

  1. 4 flour chappatis or flour tortillas or parathas (fresh or precooked)
  2. 1/4 cups finely chopped onions
  3. 1 ripe tomatoes finely chopped
  4. 1 green chillies finely chopped with or without seeds removed
  5. 4 tbsp cooking oil or butter
  6. salt as per taste
  7. 1 tbsp chopped coriander(optional )
  8. 1 cup grated mozzarella cheese ( you can use any processed cheese or slices also )
  9. For the chicken tikka :
  10. 2 chicken thighs,bone and skin removed
  11. 1 tbsp mustard oil
  12. 1 tbsp ginger garlic paste
  13. 1 tsp Kasuri Methi
  14. 4 tbsp yogurt
  15. 1 tbsp lemon juice
  16. 1 tbsp tandoori chicken masala
  17. 1 tsp kashmiri chilly powder( to add color)
  18. 1/2 tsp cayenne( adjust as per your spice preference)
  19. salt as per taste

Instructions

  1. Preheat oven to 400F. Wash and clean the chicken thighs with cold water. Pat it dry and cut it into big pieces.Sprinkle 2 teaspoon of lemon juice, some salt, and half of ginger garlic paste. Mix and let the chicken marinade rest for 10 min.
  2. Prepare the second marinade. Combine mustard oil, cayenne and Kashmiri red chilly powder in a bowl. Add ginger garlic paste, yogurt, kasuri methi powder, salt and tandoori chicken masala powder.
  3. Add the second marinade with the chicken . Mix well so that the chicken is coated well on all sides. Bake the chicken in the preheated oven for 20 minutes.
  4. In a bowl, combine onion , tomatoes, green chillies and salt. Mix and sprinkle some chopped coriander into the mixture. Keep it aside.
  5. When the chicken is cooked, take it out. Let it cool for 3-4 minutes so that it can be handled. Cut the chicken into small pieces or shred it.
  6. Take two tortillas and lay it flat on a plate.Add some onion tomato mixture on each tortilla. Add sufficient chicken over it as required. Then top it off with generous amount of mozarella cheese.Finally put another tortilla over the cheese such that it looks like sandwiched tortillas.
  7. Heat a grill pan or non-stick pan. Add oil into it . When the oil starts to simmer, slide the sandwiched tortillas into the pan. Heat till the bottom side turns crispy and the cheese melts. Flip carefully to the other side and cook for another 2-3 minutes. Take it out on a plate and let it cool for 3-4 minutes. Then slice the sandwiched tortillas into wedges. The chicken tikka Indian quesadillas snacks is ready.
  8. Serve it hot with ranch dressing or yogurt dip.
