ABOUT Pasta e Lenticchie (Pasta in Lentil sauce) RECIPE

Pasta cooked in creamy Lentil sauce . Lentils are full of protein which make them the ideal comfort food for vegetarians. This delicious pasta dish also incorporate creamy cheese and roasted peanuts for an added taste sensation .

Ingredients Serving: 4

  1. 1 onion chopped
  2. 4 cloves garlic crushed
  3. 1 inch chopped ginger
  4. 1 teaspoon chilli flakes
  5. Salt to taste
  6. 2 tablespoon tomato paste /puree
  7. 1 bay leaf
  8. 5 cups water
  9. 1cup yellow lentil , rinsed
  10. 1 cup any pasta (rotini ,tabulur , elbows )
  11. 1cup Milk
  12. 1tablespon chopped coriander
  13. 2 table spoon olive oil
  14. 2 table spoon roasted crushed peanuts
  15. 2tablespoon grated parmesan optional
  16. 2 tablespoon Chilli oil

Instructions

  1. Heat olive oil in a pan on low heat
  2. Add onion saute for 2 minutes
  3. Add ginger and garlic Saute for 2 min.
  4. Add tomoto paste and cook for 2 min
  5. Add bay leaf , thyme and salt red pepper flakes., cook for 3 to 4 minutes.
  6. Add yellow Lentil and water in a cooker , cook for 2 whistle.
  7. Cool down cooker mash lentil and make a smooth thick sauce .
  8. Add pasta and milk .
  9. Add 2 cups of water make it like soupy texture and cook uncovered.
  10. Stir continuously to avoid pasta to stick at the bottom.
  11. When liquid has reduced to a creamy sauce .
  12. Discard bay leaf .
  13. Serve pasta in serving bowls
  14. Garnish with chopped parsley roasted crushed peanuts and grated permesan and some chilli oil .
  15. Serve hot .
