CORN VEGETABLE LASAGNA

ABOUT CORN VEGETABLE LASAGNA RECIPE

This is a lighter version of traditional dish , this recipe does not have any heavy sauce

Ingredients Serving: 4

  1. 4 sheets lasagna
  2. 150gm paneer- grated and sprinkled with some salt and pepper
  3. 50gm mozzarella cheese
  4. VEGETABLE FILLING
  5. 2tbsp olive oil or any other cooking oil
  6. 1/4 cup grated cabbage
  7. 1/4 cup finely chopped carrot
  8. 1/2 red and 1/2 green capsicum or 1 green capsicum- finely chopped
  9. 1/2 cup sweet corn kernels (boiled)
  10. 300 gms tomatoes - blanched , peeled & chopped finely
  11. 2 tbsp readymade tomato purée
  12. 3 tbsp fresh basil - chopped or 1 tsp dried basil
  13. 3/4 tsp salt
  14. 1/4 tsp freshly ground black pepper
  15. 1/2 tsp sugar or to taste
  16. NUTTY TOPPING
  17. 50 gms grated mozzarella cheese
  18. 1/4 cup dry bread crumbs
  19. 1 tbsp pinenuts or chopped walnuts

Instructions

  1. To make the filling, heat oil in a pan, add cabbage, carrot, green capsicum, red capsicum, sweet corn, tomatoes, purée and basil . Cook over a medium heat , stirring frequently, until boiling.
  2. Reduce heat and simmer covered for 15 minutes or till vegetables are soft and mixture reduces and thickens to a saucy vegetable filling.Add salt, sugar and pepper to taste
  3. Mix paneer with some salt and pepper.Add mozzarella cheese and mix well.
  4. To make the topping, mix cheese , bread crumbs and walnuts.Set aside
  5. Divide filling and paneer into 4 portions
  6. Take a greased ovenproof dish . Dip a lasagna sheet in hot water to wet it . Place in the dish. Cover with vegetable filling. Sprinkle one portion of paneer cheese mix
  7. Cover with lasagna sheet. Repeat layers of wet sheet , filling and paneer mix . Cover the last sheet nicely with vegetable filling till the edges to prevent it from drying. The last layer should be of paneer-cheese mix .
  8. Sprinkle topping mix on the paneer layer . Cover dish with aluminium foil
  9. Bake in a moderately hot oven at 180 C for 40 minutes or until lasagna sheets are tender . Uncover and bake for 5-7 minutes till golden on top
