Ingredients Serving: 4

  1. 1 bunch spinach
  2. 1 cup pearl millet flour
  3. 1 cup makai aata(corn flour)
  4. 2 cups dhokla flour
  5. Ginger garlic paste 1 tbsp
  6. Chilli powder 2 tsp
  7. Turmeric 2 tsp
  8. Coriander powder 2 tsp
  9. Salt per taste
  10. buttermilk 2 1/2 cup
  11. oil 2 tbsp
  12. onion 1 nos finely chopped
  13. Sesame seeds
  14. Cooking soda 1 pinch

Instructions

  1. 1. take all the flours and mix in buttermilk, cover it and let it rest for 5 to 6 hrs
  2. 2. after the batter ferments add all the dry masalas, salt and chilli garlic paste and finely chopped spinach
  3. 3. Add soda and 1 tsp oil and give it a quick stir. Apply oil on dhokla plates and pour the batter and let it steam
  4. 4. when the dhoklas are steamed. add oil in a pan, put rai zeera tadka, sesame seeds, curry leaves and finely chopped onions and add the steamed dhokla
