Very Kokni ,maharshtrian too,leftover rotis given a makeover with tamata ie., tomatoes cald in Mumbai by many, curryleaves,onions,green chillies as per choice.There is lots of tomato to give this roti perfect taste, too.
I will surely try this.
cut Roti into small pieces,keep aside
keep ingredients ready
heat oil and splutter mustard seeds,add curry leaves too
add 1 chopped onions,saute
Add the dry seasoning now ,and green chilli cut into 2, stir fry
Add 2 tomatoes cut fine
Add rotis cut on this masaala and mix well
Mix and stir fry 2 minutes
add some water
Let it cook 2 minutes stirring and now pour about 2 glasses of water to soften roti further
Cook covered on slow for ten minutes stirring check after 3-4minutes
Add garam masala and chaat masala now mix well
Remove in a bowl and garnish with roasted peanuts crush tomato wedges and Cilantro
Serve hot
