This is one of the very interesting way of cooking leftover rotis turning into tangy and spicy dish.

Ingredients Serving: 2

  1. 4 leftover rotis
  2. 2 Green chillies finely chopped
  3. 2 small tomatoes grated
  4. few curry leaves
  5. half teaspoon mustard seeds
  6. 5 cloves of garlic
  7. 1/4 teaspoon turmeric powder
  8. One teaspoon coriander powder
  9. Handful of chopped coriander leaves
  10. Salt to taste
  11. two teaspoon oil
  12. one and half cup or more of water(explained in steps)

Instructions

  1. Heat two teaspoon oil in a Kadai
  2. add chopped garlic, saute till it changes colour and then add curry leaves and mustard seeds and let it splutter.
  3. quickly add grated tomatoes chillies, turmeric powder, coriander powder, salt and mix well
  4. Fry on high heat till the raw smell of tomatoes go away
  5. add one and half cup of water or more depending on how old your rotis are. The quantity of water required differs
  6. the more stale the rotis are the more quantity of water is required
  7. as soon as the mixture starts bubbling, tear the Roti into bite size pieces and put in the boiling mixture
  8. add coriander leaves and let it cook on the medium to low flame
  9. Cover and cook rotis till all the water dries up and the rotis become very soft.
  10. Garnish with some more coriander leaves and freshly squeezed lemon juice on top of it for a tangy taste or you can have it with curd also.
