ABOUT Shahi bharwan dum aloo RECIPE

Baby potatoes are stuffed with shahi stuffing like mawa and dry fruits and then cooked in a spicy gravy.

Ingredients Serving: 4

  1. 12-15 pieces of baby potatoes half boiled , peeled and scooped
  2. For the stuffing-
  3. 2 tbsp mawa
  4. 2 tbsp finely chopped dry fruits like kaju , pista , badam and kishmish
  5. 1 tsp finely chopped ginger
  6. 1 tsp finely chopped green chillies
  7. Salt to taste
  8. Pinch of elaichi powder
  9. For the Gravy-
  10. 1 tbsp ghee
  11. 4 tbsp tomato paste , for this grind the tomatoes and cook them without oil
  12. 1 tsp ginger green chillies paste
  13. 1 tsp redchilly powder
  14. 1 tsp dhania powder
  15. Pinch of haldi powder
  16. 2 tbsp kaju and magaz ka paste
  17. Salt to taste
  18. 1 tsp kasoori methi
  19. 1 tbsp cream or malai
  20. Some water to adjust the consistency

Instructions

  1. FOR THE STUFFING- Mix all the stuffing ingredients in a mixing bowl
  2. Fill all the potatoes with the stuffing
  3. FOR THE GRAVY-
  4. Heat ghee in a pan and put Ginger, green chillies paste.
  5. Saute for a while , then add haldi ,Red chilly powder and Dhania powder , saute a little.
  6. Then add tomato paste.
  7. Cook until the oil comes out.
  8. Then add kaju magaz ka paste.
  9. Mix nicely.
  10. Then add the stuffed potatoes.
  11. Add some water and salt to taste.
  12. Cover and cook on low heat.For 10 minutes.
  13. Then add cream or malai.
  14. Sprinkle kasoori methi , mix well.
  15. Take out in a serving bowl
  16. Serve hot with any type of Indian bread like roti , parantha.
