ABOUT Pasta with Spinach, Garlic & Breadcrumbs RECIPE

A really simple but quick and flavorful pasta recipe.

Ingredients Serving: 2

  1. Fettuccine or spaghetti – 1/2 pound
  2. Spinach (chopped) – 2 cups
  3. Garlic (minced) – 4-5 cloves
  4. Extra Virgin Olive Oil – 2 tbsp plus more for drizzling on top
  5. Red chili flakes – 1 tsp (use more or less to taste)
  6. Nutmeg (grated) – a BIG pinch
  7. Parmesan Cheese (grated) – 1/4 cup
  8. Breadcrumbs – 1/2 cup (Italian seasoned bread crumbs would be great!)
  9. Pasta Water – 1/4 cup
  10. Salt & Pepper – to taste

Instructions

  1. Heat the olive oil in a skillet on low heat. Add the garlic and chili flakes and saute for 3-4 mins on very low heat, so the olive oil is infused with the flavors of garlic and the heat from the red pepper flakes.
  2. Add the chopped spinach and the nutmeg. Season with a little bit of salt and pepper.
  3. Cook the pasta as per package directions, al dente (until the pasta still has a bite to it, not too soft).
  4. Add about 1/4 cup of the pasta water to the spinach. Drain the spaghetti into the spinach.
  5. Add grated Parmesan and mix to bring everything together.
  6. Add the breadcrumbs, toss to mix everything together and serve immediately. If you do not serve immediately, warm it in the microwave or oven just before serving! Feel free to add some extra cheese on top!
