Ingredients Serving: 3

  1. Maida 2 cup
  2. Ghee 1 cup
  3. Chilled Milk 1 cup
  4. Water chilled 3 cup
  5. Pistachio few
  6. Ice cubes 4
  7. Lemon juice 1 teaspoon
  8. Ghee for frying
  9. For sugar syrup
  10. Cardamom 3
  11. Water 2 cup
  12. sugar 1 cup
  13. For Rabdi
  14. Milk 1 liter
  15. sugar 1 tablespoon
  16. Cardamom 2

Instructions

  1. In a heavy bottom pan add 1 liter milk sugar and cardamom
  2. On low flame stir continuously
  3. When cream comes above the milk then continue stir the milk
  4. When its become thick off the flame and keep a side
  5. For sugar syrup
  6. In a pot add sugar water and cardamom
  7. When its come to boil low the flame and check the syrup
  8. If syrup have one line consistency then off the flame and keep a side
  9. For Ghewar
  10. In a bowl add ghee and ice cube now continue mix it till ghee become fluffy and like cream
  11. Now remove ice from the bowl
  12. Now add maida in it and mix well with milk (mix maida in small small portion)
  13. Now beat it 2 to 3 minutes add water in it
  14. Add lemon juice
  15. Make a flowing consistency pf batter without any lumps
  16. Now heat ghee in a small pot
  17. With the help of teaspoon slowly pour a batter in a hot ghee
  18. Again do the same pour 6 to 7 spoon batter
  19. After pouring each spoon make a hole with the help of knife
  20. Now let them cooked till golden brown color
  21. Now remove it from the pot and place it on a plate for removing extra ghee
  22. Now pour sugar syrup on the ghewar with the help of spoon
  23. Put rabdi on it and garnish with some pistachio
  24. Serve hot as well as cold
