ABOUT Kacchi Aqni Gosht Biryani RECIPE

World famous , age old , authentic recipe of Hyderabad . Kacchi style MuttonBiryani is super moist , mouth melting , slow cooked Biryani which is always a crowd pleaser . Raw mutton is marinated with the finest ingredients for long hours and slow cooked along with aromatic Basmati rice in dum method . The succulent meat pieces is cooked perfectly to melt inside the mouth . Every morsel takes you to heaven I say .

Ingredients Serving: 5

  1. Big Onions 4 thinly sliced
  2. Oil 40 ml
  3. Desi ghee 60 ml
  4. For mutton marination ( Aqni) :
  5. Mutton with bones , large pieces 750 grams
  6. Hung curd 2.5 cups
  7. Ginger garlic paste 2.5 tablespoons
  8. Raw papaya paste 2 tablespoons
  9. Turmeric 2 teaspoons
  10. green chilies 5
  11. Red chilly powder 1.5 teaspoon
  12. Cloves 5 +cinnamon 1 small stick +nutmeg 2 + star anise 1 +3 green cardamom crushed to coarse powder .
  13. Salt 2 teaspoons
  14. Mint leaves 1/2 bunch
  15. Cilantros 1/4 bunch finely chopped
  16. Fried onions ( reserve 1/2 cup for layering and garnishing)
  17. Oil and ghee used for frying onions
  18. Lemon 1 squeezed .
  19. For cooking rice :
  20. Long grained Basmati rice 750 grams
  21. Water 2 liters
  22. Salt 2 to 3 teaspoons
  23. Cloves 5
  24. Black whole pepper 1 teaspoon
  25. Caraway seeds 1 teaspoon
  26. Bay leaves 4
  27. Cinnamon sticks medium 3
  28. Green cardamom 3
  29. black cardamom 2
  30. Ghee 1 tablespoon
  31. For dum cooking :
  32. Marinated mutton
  33. Half cooked Basmati rice
  34. Mint leaves fistful
  35. Chopped cilantros fistful
  36. Fried onions reserved 1/2 cup
  37. Desi ghee 2 teaspoons
  38. Caraway seeds 3/4 teaspoon
  39. Full fat milk 1/2 cup
  40. Saffron strands 1/2 teaspoon

Instructions

  1. In a pan , heat oil and ghee for frying onions .
  2. Fry the onions until brown . Reserve 1/2 cup and use the rest for mutton marination .
  3. In a wide container , take mutton .
  4. Add all the ingredients listed under marination section one by one . Raw papaya paste is used as meat tenderizer and using it is mandatory .
  5. Mix all together well for a couple of minutes . Marinate the mutton for minimum 2 hours . Needn’t refrigerate .
  6. Coming to basmati rice , wash and soak the rice for 40 minutes .
  7. After 2 hours of mutton marination , heat a wide wok / saucepan .
  8. Add 2 liters water , salt and other ingredients listed under cooking rice part .
  9. Bring the water to boil .
  10. Add the completely drained basmati rice to the boiling water . Simmer the flame and half cook the rice .
  11. Drain the water completely and cool the half cooked rice in another wide container .
  12. Now it’s time to set all the ingredients in one pot for dum cooking .
  13. Take a biryani wide container . First add the marinated mutton along with the marinade as the first layer . Spread throughout the container .
  14. Now add the half cooked basmati rice . Spread gently on the mutton layer .
  15. Now add the mint leaves , chopped cilantros , fried onions , saffron infused milk , ghee on top .
  16. Seal the container completely with an aluminum foil . Place a heavy lid on top .
  17. Cook in low to medium for 25 minutes .
  18. Keep turning the container occasionally on the stove for even cooking .
  19. After 25 minutes , unseal the container .
  20. Bring the layers from down to up with a light spatula . Toss gently .
  21. Kacchi Aqni Mutton Dum Biryani is ready to serve .
  22. Serve hot with Burani raita and onion raita .
  23. Enjoy !
