ABOUT Roshogolla RECIPE

Roshogolla(Rasgulla) is a spongy traditional Bengali sweet made with milk solids.It is served on special ceremonies or occassions such as weedings or birthdays.It is also distributed amongst friends and family when a good news comes up.It is of course sweet, and delicious by itself.

Ingredients Serving: 6

  1. 1 litre cow's milk(full fat milk)
  2. 4 cup water
  3. 1 cup sugar
  4. 2 teaspoon lemon juice

Instructions

  1. 1. In a vessel, bring the milk to a boil.
  2. 2. Add 2 teaspoon of lemon juice to it and stir gently until milk curdles.
  3. 3. When chhana(chenna) and the whey separate out,strain using a muslin cloth.Discard or store the whey.
  4. 4. Wash the chhana(chenna)with fresh water to wash away the sourness of the lemon.
  5. 5. Bring the edges of the cloth up and tie it together.Hang the cloth for 30 minutes for the extra water to drain out.
  6. 6. In the meantime,put 4 cups of water in a vessel,add the sugar and bring to a boil,while stirring occasionally so that the sugar dissolves completely.
  7. 7. Meanwhile,squeeze the muslin cloth to drain any more water remaining.
  8. 8. Place the muslin cloth on a flat plate, open it and knead the chhana(chenna) very well using your palms for 3 to 4 minutes or till the chenna is smooth and free of lumps.
  9. 9. Divide the chhana(chenna) into some equal portions.
  10. 10. Shape each portion into a smooth round ball.
  11. 11. Put the chhana(chenna) balls into the sugar water and cover with a lid.
  12. 12. Cook for 8-10 minutes.Open the lid occasionally.You will find spongy roshogolla(rasgulla) that's doubled in size.
  13. 13. Then switch off the flame and let them cool completely.
  14. 14.Take them out in a bowl.
  15. 15. Soft, spongy roshogollas(rasgulla) are ready to serve.
