ABOUT Aloo gobhi palda RECIPE

A smooth and thick scrumptious himachali curry. The spice and flavours come out so well in this gravy. It is a must try northern flavour dish. Goes well with chapatis, phulkas etc. Easy prep and cooking.

Ingredients Serving: 4

  1. Curd 400 grams
  2. Potatoes 4
  3. Cauliflower 250 grams
  4. Raw rice 3 tbsps
  5. Water few tbsps
  6. Whole Spices :
  7. Cardamon 6
  8. Dalchini 2 peices
  9. Cloves 4
  10. Bay leaves 3
  11. Spice powders :
  12. Red chilli powder 1 tsp
  13. Garam masala powder 1 1/2 tsp
  14. Dhania jeera powder 2 tsp
  15. Turmeric 1 tsp
  16. Salt to taste
  17. Hing / asfotedia 1/2 tsp
  18. Ghee/ mustard oil 2 tbsp
  19. Onion 1 large
  20. Coriander 3 tbsps to garnish

Instructions

  1. Boil the potatoes and cut into large chunks. Keep aside
  2. Cut cauliflower into large chunks and Boil with some salt. Keep aside.
  3. Whisk curd with salt and turmeric and keep aside.
  4. Grind rice with 3 Cardamon into fine powder, then add few tbsps of water and grind into a fine paste
  5. Mix this paste with the curd
  6. Heat ghee/mustard oil in a deep sauce pan. Add the whole spices. Stir. Add hing. Now add the chopped onion and saute till transperant.
  7. Add the boiled potatoe and cauliflower peices. Add in all the spice powder, little salt and toss till coated well
  8. Cover and cook for 2 to 3 minutes. Let the peices absorb the masalas. Now lower the flame and add the curd mixture.
  9. Mix well and simmer for 5 to 7 minutes. Can add water to the consistency required.
  10. Switch off and garnish with finely chopped coriander.
