Ingredients Serving: 2

  1. 1 Green Zucchini
  2. 1 Yellow Zucchini
  3. 1/2 Mushrooms or any other vegetable
  4. 4 Tablespoon Tomato Basil Sauce
  5. 1 Teaspoon Italian Seasoning
  6. 1 Teaspoon Chili Flakes
  7. 1/2 teaspoon black pepper powder
  8. 4 Garlic Cloves
  9. fresh basil leaves
  10. Salt
  11. Olive oil
  12. Grated Cheese (optional)

Instructions

  1. Chop green and yellow zucchini into thin long pasta strands using a spiralizer or salad cutter.
  2. Put the chopped zucchini in a bowl, sprinkle some salt over it and leave it for 5 minutes.
  3. After 5 minutes press the pasta between your palms so that extra water comes out of it.
  4. Now heat up a pan and add olive oil into it and add any vegetable of your choice.Saute it for 5 minutes.
  5. Add chopped garlic cloves into it and let it cook for few seconds.
  6. Add our homemade tomato basil pasta sauce into the pan and give it a stir.Cook for 30 seconds.
  7. Time to add zucchini pasta into the pan.Mix everything well so that it is coated well with the sauce. Add Italian seasoning , chili flakes, black pepper powder and salt into the pan and give it a stir again.
  8. Cook on low heat for 8 to 10 minutes and make sure you are over not cooking it otherwise pasta will become watery. Serve it hot and garnish it fresh basil leaves.Add grated cheese if you like.
  9. Homemade tomato basil pasta sauce : Chop 3 tomatoes into small pieces and make a puree out of them using a hand blender or mixer grinder.Do not blend it a lot and make sure your puree is having few chunks of tomato.
  10. Heat olive in a pan and put 4-5 garlic pieces into it when the olive oil is hot. Saute the garlic pieces for few seconds and make sure that they do not get burned. Add the tomato puree into the pan and let it cook for 5-7 minutes.
  11. When the sauce starts changing its colour then add 5-6 basil leaves (Cut into small strips), salt, pepper (1 tablespoon) and oregano (1 tablespoon) into it. Mix everything properly and let it cook for another 5-7 minutes.
  12. Keep stirring in between otherwise the sauce might get burnt. Taste the sauce and adjust the spices and salt as per your liking if you feel like. And your sauce is ready and your refrigerate it once is has cooled down.
