Heard about banoffee pies right? Here comes a younger brother of it! Banoffee Parfaits - a perfect combination of bananas and caramel. Recipe inspired from Laura in the kitchen.

Ingredients Serving: 4

  1. 1/2 tin condensed milk
  2. 2 teaspoons milk
  3. 1/2 cup whipping cream/heavy cream (35% fat)
  4. 2 tablespoon caster sugar
  5. 1/2 teaspoon vanilla essence
  6. 1 ripe banana
  7. 4 tablespoons semi-sweet choco chips

Instructions

  1. Pulse biscuits in a food processor until they are crushed coarsely. You can even do this using a rolling pin.
  2. Heat a heavy bottomed vessel filled with enough water and put another steel bowl over which fits on the vessel but does not go inside or touch the water inside. This step is to prepare double boiler for making dulce de leche.
  3. Place the double boiler on heat and once the water beneath starts to boil, add condensed milk to the bowl on top. Turn the heat to medium-low and heat condensed milk until it turns little brown (20 minutes). Add milk and mix. Remove in a bowl and allow it to cool.
  4. Take 4 clear glasses preferably small in size and height. Add about 2 teaspoons crushed biscuits at the bottom. Fill dulce de leche in a piping bag and pipe a generous amount over biscuits.
  5. Cut bananas in slices and place 4-5 slices over the dulce de leche. Put 1 tablespoon chocochips on it and keep in refrigerator to chill.
  6. Meanwhile whip your cream and 2 tablespoons sugar and vanilla essence until it forms soft peaks. Fill this in a piping bag. Pipe generous amount of whipped cream on top.
  7. Sprinkle some crushed butterscotch praline and chocochips on top and refrigerate for at least 1 hour. Repeat the steps for all the glasses. Your banoffee parfaits are ready!

I have a doubt with condensed milk which can b made at home so again do we hve to make it dark brown by boiling the method u mentioned .
