ABOUT Chal kumror Sukto RECIPE

Chal kumtor sukto(ash gourd)sukto is a traditional mild Bengali appetizer served for lunch.Sukto usually has a bitter element in it.We generally make sukto sometimes using bitter vegetables,at another times bitter spices such as fenugreek or mustard.But it is always mild(never hot,sour or spicy).This is one of the easiest recipes out there.

Ingredients Serving: 4

  1. 750 gram chal kumro(ash gourd)finely chopped
  2. 4 medium sized bitter gourd thinly sliced
  3. 1/2 cup yellow split pea soaked in water for 3-4 hours
  4. 1 teaspoon cumin powder
  5. 1/2 teaspoon turmeric powder
  6. 1 teaspoon mustard paste
  7. 3 teaspoon salt
  8. 1 teaspoon sugar
  9. 2 tablespoon oil
  10. 2 teaspoon ghee
  11. 1 teaspoon crushed black pepper
  12. For tempering:-
  13. 2 bay leaves
  14. 1/2 teaspoon mustard seed
  15. 1 whole dry red chilli

Instructions

  1. 1. Drain the soaked dal and grind it into a thick paste by adding salt along with little water.
  2. 2. Now make small dumplings out of it.
  3. 3. Heat oil in a pan and gently slide the dumplings into the oil and fry on medium heat till both sides turn golden brown.
  4. 4. When done remove them and keep aside.
  5. 5. Fry bitter gourd till they become crispy . When done keep them handy.
  6. 6. Heat 2 teaspoon oil in a kadai and temper it with bay leaf,whole dry red chilli and mustard seed. Let it sizzle .
  7. 7. Add chopped chal kumro(ash gourd) and sprinkle salt over it . Give a nice stir.
  8. 8. Now add turmeric powder,cumin powder, crushed black pepper and mustard paste into it . Mix well.
  9. 9. Now add sugar . Give it a nice mix and cook it covered till the chal kumro(ash gourd) becomes soft.
  10. 10. Add in the fried bitter gourd and mix well.
  11. 11. Now add some ghee and the fried dumplings in it . Mix everything well.
  12. 12. Allow it to simmer on low heat for another 2-3 minutes.
  13. 13. Turn off the heat and take it out in a bowl.
  14. 14. The dish should neither be too dry nor too runny.
  15. 15. Chal kumror(ash gourd) sukto is ready to serve now.
