Cherry Cranberry Tea Time Scones

ABOUT Cherry Cranberry Tea Time Scones RECIPE

Scones are single-serve cake or quick bread mildly or moderately sweet. There can be a multitude of varieties in scones, sweet or savoury. These are just perfect for afternoon English Tea tradition.

Ingredients Serving: 8

  1. 2 cups All Purpose Flour (Maida)
  2. 2 tsp baking powder
  3. 1/4 tsp Salt
  4. 1/2 cup superfine sugar or 1/4 cup custard Apple (sitafal) pulp+1/4 cup fine sugar
  5. 5.3 tbsp cold butter
  6. 2/3 cup whipping/heavy cream
  7. 1 cup mix of dried cherries and cranberries
  8. 1 tsp vanilla extract or imitation vanilla
  9. 1 tsp almond extract (optional)
  10. Melted butter for brushing
  11. 2 tbsp Cream mixed with 1 tbsp brown sugar and 1/2 tsp cinnamon powder (optional)

Instructions

  1. Preheat oven to 375 Deg F (190-200 Deg C).
  2. Mix all the dry ingredients. If using only sugar, then add it to the flour.
  3. Cut butter in small pieces rub it gently along with the flour with fingers.
  4. Mix in the dry cherries and cranberries.
  5. Mix all the wet ingredients together except the last two ingredients in the list and add to the flour.
  6. With floured hands, form a dough (mixture will be sticky). Knead 4-5 times till it comes together. Form a round shape approximately 1/2" in thickness. Cut it out in equal-sized wedges or any desired shapes.
  7. Apply cream sugar cinnamon mixture with pastry brush. Sprinkle slivered almonds.
  8. Line a baking tray with nonstick parchment paper. Place the wedges with little gaps in between. Bake for 15-18 minutes or till done.
  9. Once done, remove from oven. Apply melted butter. Cool for 5 minutes and then transfer to wire rack to cool completely (can be eaten warm too).
