Delicious Masala rice with roasted peanuts and peanut masala

Ingredients Serving: 2

  1. 1 teaspoon oil
  2. 2 tbsp peanut
  3. 1 teaspoon urad dal
  4. 1 teaspoon chana dal
  5. 1/2 teaspoon cumin seeds
  6. 1 teaspoon sesame seeds
  7. 3 dry red chilli
  8. 2 tbsp grated coconut
  9. 2 cups cooked rice
  10. 2 teaspoon oil
  11. 6-7 curry leaves
  12. 3 tbsp peanuts
  13. 1 teaspoon mustard seeds
  14. 1/2 teaspoon salt

Instructions

  1. Heat 1 teaspoon oil. Roast 2 tbsp peanuts, chana dal, urad dal and cumin seeds with sesame Seeds and dry red chili until aromatic
  2. Add coconut and roast for a minute
  3. Allow to cool completely and grind to fine powder
  4. Heat 2 teaspoon oil in a pan and splutter mustard seeds
  5. Add peanuts and curry leaves. Roast until peanuts are crunchy
  6. Add salt and ground masala. Mix well
  7. Add cooked rice and gently mix
  8. Cover and Simmer for 2-3 minutes. Serve hot with Raita
