Ingredients Serving: 3

  1. Brijinal 4
  2. Oil
  3. Mustard seed 2 spoon
  4. Fenugreek 1/2 spoon
  5. Cumin 1/2 spoon
  6. Saunf 1 spoon
  7. Ajwain 1/2 spoon
  8. Garlic 6 clove
  9. Green chilli 4
  10. Mango pickle 2
  11. Salt as per ur taste

Instructions

  1. Heat the pan and roast cumin,ajwain, fenugreek, saunf and put a side
  2. Take a mixer and put garlic, green chilli, mango pickle and roasted masala.
  3. Once cooled, blend in a mixer to a smooth paste using approx. cup of water. Keep aside.
  4. Slit the brinjals in the centre to make a half mark that divides each brinjal into 2 parts joined at the stem.
  5. Stuff the slits of each brinjal with the prepared stuffing and keep the remaining stuffing aside.
  6. Heat the oil in a deep non-stick kadhai and fry the stuffed brinjals Cover it with a lid and cook on a low flame for 10 minutes, while stirring occasionally.
  7. Keep tossing the brinjals occasionally to avoid them from breaking.
  8. Serve with rice or roti
