ABOUT Coconut Paneer Masala RECIPE

Delicious Paneer cooked in coconut spices and coconut milk

Ingredients Serving: 4

  1. 200g cubed Paneer
  2. 1/2 cup thick coconut milk
  3. 1/3 cup thin coconut milk
  4. 1 bay leaf
  5. 1/4 teaspoon red chilli powder
  6. 1 teaspoon garam masala
  7. 1/4 teaspoon sugar
  8. Salt to taste
  9. 2 tbsp oil/butter/ghee
  10. To Roast and grind
  11. 3 teaspoon oil
  12. 4 tbsp Dessicated or dry coconut
  13. 1 onion roughly chopped
  14. 2 big tomatoes roughly chopped
  15. 2 cloves
  16. 2 green cardamom
  17. 1 strand mace
  18. 1 black cardamom
  19. 1/2 inch cinnamon stick
  20. 6-7 whole cashews chopped
  21. 1-2 green chillies
  22. 1 tbsp ginger garlic paste

Instructions

  1. Heat oil in a pan and roast whole spices until aromatic
  2. Add onions and saute for 3-4 minutes
  3. Add ginger garlic paste and green chillies. Saute for 2 minutes
  4. Add tomatoes and saute until mushy
  5. Add Dessicated coconut and lightly roast. Allow mixture to cool completely. Grind to smooth paste
  6. Grill or fry paneer in a pan with little oil until golden brown on edges keep it aside
  7. Heat oil/ butter/ ghee in a pan. Add bay leaf and saute for few seconds
  8. Add ground paste and saute for 4-5 minutes.
  9. Add red chilli powder, sugar and salt. Mix well
  10. Add thin coconut milk and paneer. Cover and simmer for 2-3 minutes
  11. Add thick coconut milk.stir and switch off. Cover and rest for 15-20 minutes. garnish with coriander leaves.Serve hot with roti or pulao
