This is a delicious korma with loads of veggies simmered in coconut gravy that goes well with puris rotis idiyappams idli and dosa
Nice one.
Take a big pan add ghee or oil . Then fry the bay leaf and finely chopped onions .
when the onion is light brown add in the gag paste and tomato .
Fry for two mins and then add in all the chopped vegetables .
Stir well in high heat for a minuite .
Now add in the red chilly powder and turmeric powder .
Add in some salt and one cup water . Allow it to cook for fifteen mins or till the vegetables are done .
Once the vegetables are 3/4th cooked add in the ground masala paste along with the garam masala and salt .
Allow it to boil and then simmer it for ten mins or the kurma gets its consistency . Sprinkle kasoori methi at this stage .
Finally garnish it with some chopped coriander leaves .
