Ingredients Serving: 2
For the pizza crust :
Whole wheat flour 1 cup = 170 ml
Coconut thick milk 1/4 cup or as required
Salt a big pinch
Powdered palm sugar 1/4 teaspoon
Instant yeast 1 teaspoon
Warm water 1 tablespoon
Olive oil 1 tablespoon
Red chilli flakes 1/2 teaspoon
For the coconut sauce :
Coconut thick milk 2 cups
Corn flour 1.5 tablespoons
Garlic cloves 4 finely crushed to paste
Olive oil 1 tablespoon
oregano 1/2 teaspoon
Dried thyme 3/4 teaspoon
Red chili flakes 1/2 teaspoon
White pepper powder 1/4 teaspoon
Salt 3/4 teaspoon or as required
Other Ingredients :
Onion medium 1 thinly sliced
Carrot 1 small thinly sliced
Parsley chopped 1 tablespoon
Spring onion chopped 1 tablespoon
Olive oil for greasing and brushing
Instructions
Take 1 tablespoon warm water in a bowl .
Add instant yeast to the water . Mix and set aside for 5 minutes .
Take sifted flour, salt , sweetener in a wide bowl .
Add chili flakes .
Mix all together .
Add coconut milk gradually . Knead to a soft dough .
Cover the dough and keep it in a warm place for 1 hour .
Meantime , let’s prepare the pizza coconut sauce .
In a pan , add olive oil .
Add crushed garlic .
Add the corn flour and sauté the flour well in oil .
Then add the coconut milk . Start stirring continuously to ensure there are no lumps .
Stir until coconut milk reduces half .
Sprinkle salt , red chili flakes , oregano and thyme .
Mix all until saucy consistency . Coconut sauce is ready .
Switch off . Allow the sauce to cool .
Coming to the dough , our dough has doubled in size and is ready to use .
Don’t forget to preheat cooker / oven .
I preheated cooker for 10 minutes in low to medium heat .
Divide the dough into two . This step is optional .
Grease olive oil on a baking tray .
Grease fingers with oil .
Take the dough and place it on the tray .
Flatten the dough to preferred thickness round crust .
Press with your fingers to give it a pizza crust look .
Use a fork and make few dots in the center portion of the pizza crust . Don’t press too much and tear the dough .
Now apply the prepared pizza coconut sauce
Arrange the veggies on top . Top another layer is sauce if preferred .
Brush the sides with olive oil .
Bake in a preheated cooker for 15 minutes .
The crust turns golden while the sauce gives a tempting look .
It’s done . Take it out hot and serve immediately .
