ABOUT Bohra style chicken gravy RECIPE

Delicious chicken gravy cooked in a rich paste of onions and tomatoes tempered with natural spices.

Ingredients Serving: 4

  1. Chicken pieces 500gms
  2. Onions 3 med sized sliced
  3. Tomato 1 med
  4. Oil for deep frying onions
  5. Oil for cooking 3 tbsp
  6. Ginger paste 2 tsp heaped
  7. Garlic paste 2tsp
  8. Red chilly powder 2 tsp
  9. Dhania jeera powder 2tsp
  10. Haldi powder 1 tsp
  11. Jeera whole 2 tsp
  12. Cloves 3-4
  13. Cinnamon 1" pc
  14. Bay leaf 1
  15. Star anise 1
  16. Salt to taste
  17. Coriander leaves for garnish

Instructions

  1. Marinate the cleaned and wasged chicken with ginger paste and salt and set aside
  2. Deep fry the sliced onions till golden brown.
  3. Add the fried onions and one tomato to the mixer and grind to a smooth paste.
  4. Heat 3 tbsp oil in a pressure cooker. Add the whole spices - jeera, clove cinnamon bay leaf star anise. And saute for a few seconds.
  5. Add the garlic paste and fry till the smell of garlic goes away.
  6. Add the onion tomato paste and saute well till oil separates.
  7. Now add the spices...red chilly powder. Jaldi Shania jeera powder. Mix well for a minute.
  8. Add the marinated chicken pieces and mix till the masala is coated on the chicken thoroughly.
  9. Now adjust the salt.
  10. Add about half a glass of water or less. Once the whistle is ready pressure cook on very slow flame for about 15 minutes.
  11. Open and check if the chicken is done.
  12. Garnish with fresh coriander. Serve with roti or rice.
