ABOUT Calicut Chicken Roast RECIPE

Deep roaster chicken witn a cunchy taste of coconut pieces.

Ingredients Serving: 4

  1. Marination
  2. 1/2 kg chicken
  3. 3 tbsp lemon juice
  4. Salt as per taste
  5. Pepper powder 1 tesp
  6. Chilli powder 1 1/2 tesp
  7. 1/2 tesp turmeric powder
  8. Masala :
  9. 5 tbsp oil
  10. 1 tesp minced ginger
  11. 1 tesp minced garlic
  12. 2 tbsp finely chopped coconut
  13. 2 onions sliced
  14. Puree of 3 tomato
  15. Chilli powder 2 tesp
  16. Coriander powder 1 tesp
  17. Salt as per taste
  18. Garam masala powder 1 tesp
  19. Pepper powder 1 tesp
  20. Turmeric powder 1/4 tesp
  21. Few curry leaves

Instructions

  1. Marinate the chicken with the given ingredients for 30 minutes.
  2. Place a deep cooking pan with oil on medium flame.
  3. Stir in the curry leaves,add ginger , garlic and coconut saute for a minute.
  4. Add onions and saute till it's brown.
  5. Add the marinated chicken,mix well cover and cook on low flame for 5 to 8 minutes.
  6. Add in he tomato puree,salt, turmeric chilli coriander powder,gram masala powder and pepper powder.
  7. Saute till well combined.
  8. Cover and cook for 10 minutes in low flame.
  9. Open and roast it , increasing the flame,
  10. Calicut chicken fry is ready to serve as a side dish.
